Healthy Caesar Dressing

Caesar salad is one of my all time favorite foods, & my mom's dressing is the best I've ever had. & the best part? It's a healthier version and tastes even better for it! I've made it for friends on so many occasions, & it's my go-to to bring to an event. Hope y'all enjoy!


Ingredient Breakdown
Light Mayo & Greek Yogurt: This is the part that makes it healthier. I also love the more sour flavor the yogurt adds!
Lemon Juice: Usually, 3 large lemons are enough! Add more if the dressing needs more acidity.
EVOO, Worcestershire Sauce, Dijon, Garlic: These add all the classic Caesar flavor.
Parmesan: Adds the structure to the dressing, don't forget some on top!
Anchovy: This is my secret ingredient! It adds the sour flavor and makes it perfect. Don't be afraid of the fish vibe-- it's so worth it!
Ingredients:
1/4 cup light mayo
1/4 cup greek yogurt
1/4 cup fresh lemon juice
2 tablespoons EVOO
2 teaspoons dijon mustard
2 teaspoons Worcestershire sauce
2 garlic cloves, grated or minced
2/3 cup Parmesan cheese
1 cleaned anchovy filet
Salt and pepper to taste
Instructions:
Combine all the ingredients in a mini food processor or blender
Blend until smooth
Add on top of romaine with grilled chicken and enjoy!

Yay! Love! You can also use anchovies paste…a good squeeze (like a teaspoon). It keeps in the fridge and doesn’t taste as ‘fishy.’
