Christmas of 2025 was my last Christmas at home. I got engaged in April of 2025 to my high school sweetheart, Joe, & spent the last Christmas with my sisters & parents at home. It was bittersweet, but of course we had a blast! Most of the break was spent playing mahjong, needlepointing, & baking. My mom & sister, Gracie, were obsessed with finding the best granola recipe, & this is it! I eat this granola by itself, but we also enjoyed it on yogurt, cottage cheese, & I'd bet it would be great on ice cream. Hope y'all enjoy!

Ingredient Breakdown
Oats: I use the HEB brand organic old-fashioned oats. Any old-fashioned oats will do!
EVOO: This helps to add flavor and crisp up the granola.
Maple Syrup: I like to mix it up and add some vanilla or bourbon-flavored syrup!
Brown Sugar: If you like your granola a little less sweet, feel free to add less than 1/3 cup.
Cinnamon, Cardamom, Vanilla, Salt: The spices that add the flavor! More vanilla makes it sweeter.
Egg White: This is the key ingredient-- it makes the granola extra crispy! Add another if you want it to be even more crisp.
Recipe
3 cups oats
1/3 cup extra-virgin olive oil
1/3 cup maple syrup
1/3 cup brown sugar
1 tablespoon cinnamon
1 teaspoon vanilla extract
1 teaspoon cardamom
1 teaspoon salt
1 egg white, beaten
Make sure the egg white is beaten in a bowl
Add the rest of the ingredients to the bowl and mix
Bake on a sheet lined with parchment paper in the oven at 300 degrees. Bake for 20 minutes, then take out the pan and shake or mix the granola before baking for another 17 minutes
Let cool on pan for 30 minutes, then enjoy!
Conclusion
Making this granola in my college home makes the whole house smell amazing! I keep a jar on my shelf at all times. It keeps for up to a week & makes a great gift for friends and family!
